Word of the week: “Cosmic”

We hope this finds you well and that you had the chance to witness the awe-inspiring solar eclipse this week. In honor of this celestial event, our word of the week is "cosmic." We hope you found moments of wonder and connection with the universe during this remarkable occurrence.

This week, we had the pleasure of diving into the world of lacto-fermentation with the guidance of the talented Lissy. Lacto-fermentation is an ancient food preservation technique that requires only three ingredients: the vegetable of your choice, salt, and time! Together, we rolled up our sleeves and got hands-on with the creation of sauerkraut. Not only did we learn about the rich history and numerous health benefits of fermentation, but we also delved into the fascinating process behind it.

 
 

The workshop happened at the Community Kitchen on 467 Broadway. We partnered with Kristin from the City Live Well Initiative, who focuses on addressing concerns with food security and health issues. Kristin led our fellows last year, teaching them about food injustice and how it affects local areas. In this session, she wanted to talk about our cooking space, what we liked, what could be better, and what workshops we want. We also talked about health and food choices, considering historical injustices. We discussed making sure our workshops are safe and inclusive for everyone. Working in such a beautiful space was a great experience, where we shared knowledge and a love for homemade food.
